👨🍳 Step-by-Step Instructions
Prepare the Silky Potato Purée
Place peeled, cubed Yukon Gold potatoes into a saucepan of cold, salted water. Bring to a rolling boil and cook for 15–18 minutes until completely tender when pierced with a fork. Drain thoroughly, then press through a potato ricer or mash with 3 tbsp butter and warm milk until glossy and satin-smooth. Season to taste with salt and keep warm over very low heat.
Simmer the Glossy Miso Glaze
In a small saucepan, whisk together white miso paste, mirin, sake, honey, and soy sauce until completely smooth and lump-free. Place over medium-low heat and simmer gently for 1–2 minutes, stirring constantly, until glossy, fragrant, and thick enough to lightly coat the back of a spoon. Remove from heat.
Sear the Scallops
Thoroughly pat the Hokkaido scallops dry on paper towels. Season both sides with a pinch of fine salt and white pepper. Heat a heavy-bottomed skillet over high heat until wisps of smoke appear. Add 1 tbsp neutral oil, then place the scallops into the pan with ample space. Sear undisturbed for 90 seconds until a deep, golden caramelized crust forms.
Glaze and Caramelise
Flip the scallops carefully. Generously brush the seared tops with the warm miso glaze. Cook for 60–90 seconds on the second side, spooning or brushing additional glaze around the edges so the sugars bubble and lacquer the crust. Immediately transfer to a warm resting plate.
Plate & Garnish with Elegance
Using the back of a warm spoon, spread and swirl the silky potato purée into an elegant circular ring on each warmed plate. Spoon the warm blanched edamame into the centre nest. Arrange three caramelized miso scallops atop the edamame, dot with remaining glaze drops, and crown with fresh sorrel leaves and delicate edible purple flowers. Serve immediately.
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
