🥗 Ingredients (tap to check off)
For the Silky Dumpling Dough
- 7 cups (about 900 g) all-purpose flour
- 2 large eggs, room temperature
- 2 tsp fine sea salt
- 1¼ cups (300 ml) lukewarm water
For the Juicy Meat & Potato Filling
- 900 g (2 lbs) ground beef or lamb
- 4–5 medium yellow onions, finely diced
- 4 medium russet or Yukon gold potatoes, peeled and finely diced
- 1½ tsp fine sea salt
- 1 tsp freshly ground black pepper
- 2 tbsp vegetable oil
For Serving & Sizzling Chili Oil
- 1½ cups thick plain whole-milk yogurt
- 3 tbsp neutral cooking oil or butter
- 1 tbsp mild red pepper flakes (or crushed chili flakes)
- Fresh dill or parsley sprigs
👨🍳 Step-by-Step Instructions
Knead & Rest the Dough
In a large mixing bowl, combine the flour, eggs, sea salt, and lukewarm water. Knead for 8–10 minutes until smooth, firm, and elastic. Shape into a ball, cover with a damp kitchen towel or plastic wrap, and rest for 25–30 minutes to relax the gluten.
Mix the Filling
In a large bowl, combine the ground meat, finely diced onions, and finely diced potatoes. Add 1½ tsp salt, black pepper, and 2 tablespoons of oil. Mix thoroughly with your hands until the seasonings and vegetables are evenly distributed throughout the meat.
Roll & Cut Thin Squares
Divide the dough into 3 equal balls. On a lightly floured surface, roll one dough ball out as thin as possible (about 1 mm). Cut the rolled sheet into 4x4-inch (10x10 cm) squares.
Fill & Pleat the Dumplings
Place a generous tablespoon of filling in the center of each square. Bring two opposing corners together over the filling and pinch tightly to seal, then bring the remaining two corners together. Finally, pinch the adjacent open corners together on each side to create a classic enclosed rosette dumpling shape.
Steam Until Glossy
Brush the perforated racks of your steamer pot lightly with oil to prevent sticking. Arrange the dumplings on the racks, leaving about an inch of space between each. Steam over high heat for 25–30 minutes until the dough turns glossy, translucent, and tender, and the potato-meat filling is cooked through.
Prepare the Spiced Chili Oil
Heat 3 tbsp oil or butter in a small pan over medium heat. Stir in the red pepper flakes for 30 seconds until fragrant and vibrant red, then remove from heat.
Serve Warm
Transfer the hot steamed dumplings to a large serving platter. Serve immediately accompanied by cool plain yogurt, fresh dill, and a generous drizzle of hot spiced chili oil.
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
