- ¾ cup shredded sharp cheddar cheese (plus extra pinches for the molten centers)

- ¼ tsp freshly cracked black pepper
- 2 tbsp avocado oil or light olive oil, for pan-frying

👨🍳 Step-by-Step Instructions
Mash the White Beans
Add the drained and rinsed white beans to a large mixing bowl. Using a potato masher or sturdy fork, mash until mostly broken down into a coarse paste, leaving a few half-beans intact for hearty texture.
Grate and Wring the Vegetables (Do Not Skip)
Coarsely grate the zucchini and peeled carrot on the large holes of a box grater. Transfer the shreds into the center of a clean kitchen towel. Twist the towel tightly and wring with all your strength over the sink until no more juice comes out. The drier the shreds, the crunchier the fritters will fry.
Mix the Thick Fritter Batter
Add the wrung-out zucchini and carrot shreds into the bowl with the mashed beans. Add the shredded cheddar cheese, beaten egg, all-purpose flour, fine sea salt, and black pepper. Stir with a spatula until thoroughly combined into a thick, scoopable batter.
Heat the Skillet
Heat 2 tablespoons of avocado oil or olive oil in a large nonstick skillet or seasoned cast-iron pan over medium heat until the oil shimmers.
Scoop, Stuff Cheese & Pan-Fry
Drop the batter into the hot pan in rounded ¼-cup scoops (fry 4 fritters at a time to prevent crowding) and gently flatten each one into a ½-inch thick round patty with the back of a spatula. For an extra cheesy center, press a small pinch of cheddar into the middle of each fritter and cover it with a tiny dab of batter.
Flip Once to Golden Crisp
Cook undisturbed for about 2 minutes per side, until deep golden-brown and crisp at the edges and cooked through in the center. Transfer to a paper-towel-lined plate while you fry the second batch.
Serve Warm or Pack for Lunchboxes
Stack the fritters high on a serving plate and serve hot while the cheese centers are melty, paired with creamy garlic yogurt dip, ranch, or ketchup. Or let cool completely and pack into lunchboxes.
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
🍳 Recommended Kitchen Equipment
