🥗 Ingredients (tap to check off)
- 4 large large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp extra virgin olive oil
- 2 cloves garlic cloves, minced
- 1 tsp granulated sugar (optional, helps caramelization)
- 0.5 tsp fine sea salt (plus more to taste)
- 0.5 tsp black pepper
- 0.5 tsp dried thyme (or 1 tsp fresh thyme)
- 1 whole dried bay leaf
- 0.5 cup dry white wine (optional for deglazing)
- 1 tbsp all-purpose flour (optional, for body)
- 6 cups rich beef broth
- 1 tbsp Worcestershire sauce (optional)
- 4 slices French baguette slices (toasted)
- 2 cups shredded Gruyère or Swiss cheese
- 1 tbsp fresh thyme or parsley (for garnish)
👨🍳 Step-by-Step Instructions
Slow-Caramelize the Onions
Heat butter and olive oil in a large Dutch oven over medium-low heat. Add the thinly sliced onions and salt. Cook for 35–45 minutes, stirring every few minutes, until the onions are deeply caramelized, soft, and rich golden brown. Don't rush this step!
Add Garlic & Seasonings
Add the minced garlic, black pepper, thyme, and optional sugar. Cook and stir for 1–2 minutes until fragrant.
Deglaze with White Wine
If using flour, sprinkle it over the onions and stir for 1 minute. Pour in the dry white wine and scrape up all the delicious browned bits from the bottom of the Dutch oven. Let simmer for 2–3 minutes until reduced.
Simmer the Rich Broth
Pour in the beef broth, bay leaf, and Worcestershire sauce. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 20–25 minutes. Taste, adjust salt and pepper, and discard the bay leaf.
Toast the Baguette
While the soup simmers, toast the French baguette slices in the oven at 400°F (200°C) for 5–8 minutes until crisp and golden.
Assemble & Broil the Cheese Crust
Ladle hot soup into oven-safe ceramic bowls or crocks. Place a toasted baguette slice on top of each bowl and pile generously with shredded Gruyère cheese. Place under the broiler for 2–4 minutes until bubbling, melted, and golden brown.
Garnish & Serve Hot
Carefully remove from the oven and let rest for 1 minute. Garnish with fresh thyme or parsley. Break through that crispy cheesy crouton and enjoy piping hot!
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
