🥗 Ingredients (tap to check off)
For the Soup Base
- 3 large yellow onions, thinly sliced
- 2 red onions, thinly sliced
- 2 shallots, thinly sliced
- 4 tbsp unsalted butter
- 2 tbsp extra-virgin olive oil
- 1 tsp sugar
- 1 tsp salt (plus more to taste)
- 4 garlic cloves, minced
- 2 tbsp all-purpose flour
- ½ cup dry white wine (or dry sherry)
- 8 cups high-quality beef broth
- 1 bay leaf
- 2–3 sprigs fresh thyme (plus extra for garnish)
- Freshly ground black pepper, to taste
For the Baguette & Gruyère Crust
- 1 French baguette, cut into ½-inch thick slices
- 2 cups Gruyère cheese (or Swiss cheese), freshly grated
- 1 garlic clove, halved (for rubbing the toasted baguette)
👨🍳 Step-by-Step Instructions
Caramelize the Onions
Melt the butter with olive oil in a large heavy pot or Dutch oven over medium heat. Add all the sliced yellow onions, red onions, shallots, sugar, and salt. Cook, stirring frequently, for 30–40 minutes until the onions become deeply golden-brown, jammy, and sweet. If onions brown too quickly, turn down the heat and add a splash of water.
Build the Flavor Base
Stir in the minced garlic and cook for 1 minute until aromatic. Sprinkle the all-purpose flour evenly over the onions and stir continuously for 1–2 minutes to cook off any raw flour taste.
Deglaze the Pot
Pour in the dry white wine, using a wooden spoon to scrape up all the flavorful caramelized browned bits from the bottom of the pot. Allow it to bubble vigorously for 2–3 minutes until mostly reduced.
Simmer the Broth
Pour in the beef broth, then add the bay leaf and fresh thyme sprigs. Bring to a gentle boil, then lower heat and simmer uncovered for 20–25 minutes. Season with salt and freshly cracked black pepper to taste. Discard the bay leaf and thyme sprigs.
Toast & Rub the Baguette
While the soup is simmering, arrange baguette slices on a baking sheet and toast in the oven until golden and crunchy. Rub the cut side of the halved garlic clove over the surface of each warm toasted baguette slice.
Assemble in Crocks
Preheat the broiler. Ladle the piping-hot soup into oven-safe ceramic bowls or soup crocks. Top each crock with a sprinkle of grated Gruyère, float 1–2 toasted garlic baguette slices on top, and smother generously with another handful of grated Gruyère.
Broil to Golden Perfection
Place the crocks on a baking sheet under the broiler for 2–4 minutes, until the Gruyère cheese is completely melted, bubbling, and blistered with golden spots. Garnish with fresh thyme leaves and serve immediately.
🥣 Storing, Freezing & Reheating Soup
Refrigerator: Allow the soup to cool completely, then ladle into airtight glass containers. Refrigerate for up to 3 to 4 days. Soups often taste even richer the next day as the herbs and broth deepen.
Freezing & Reheating: Freeze in portioned containers for up to 3 months. Reheat gently over medium-low heat on the stovetop, adding a small splash of broth or water if the noodles or legumes have absorbed liquid.
