👨🍳 Step-by-Step Instructions
Marinate the Chicken
Cube the chicken breasts and place in a large bowl. Add the olive oil, salt, Italian herbs, parsley, garlic powder, onion powder, paprika, and chili flakes. Toss thoroughly to coat every piece evenly and let marinate while prepping the rest.
Cook the Basmati Rice
Cook the basmati rice in salted water according to package instructions until tender and fluffy. Drain any excess water and set aside to cool slightly.
Simmer the Alfredo Sauce
Melt the light butter in a saucepan over medium heat. Add the minced garlic and diced white onion; sauté for 5 minutes until soft and fragrant. Stir in ½ tsp salt, 2 tsp Italian herbs, and paprika. Pour in the milk and whisk until smooth and warm, then melt in the grated parmesan and light cream cheese. Whisk constantly on low heat until velvety and thick, then remove from heat.
Oven-Roast the Chicken
Preheat oven to 200°C (400°F). Spread the seasoned chicken cubes in an even single layer on a large parchment-lined sheet pan. Bake for 18 minutes, then switch oven to broil/grill on high for 5 minutes until the chicken is golden-brown and lightly charred at the edges.
Fold the Tuscan Rice on the Pan
Transfer the cooked chicken pieces to a plate. In the same sheet pan, utilizing the seasoned chicken roasting juices, add the chopped red onion, sun-dried tomatoes, chopped parsley, 1 tsp salt, 3 tsp Italian herbs, and 2 tsp paprika. Drizzle about ⅓ of the creamy alfredo sauce over the pan. Add the cooked basmati rice and gently fold everything together until the rice is evenly coated and seasoned.
Roast & Crisp the Rice
Flatten the rice mixture evenly across the sheet pan. Reduce oven temperature to 180°C (370°F) and roast the sheet pan for 15 minutes to allow the flavors to deepen and the bottom edges to become slightly crisp.
Assemble & Serve
Top the roasted Tuscan rice with the grilled chicken chunks. Drizzle the remaining warm creamy alfredo sauce generously over the chicken and rice. Shower with extra grated parmesan and fresh parsley. Serve hot.
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
