👨🍳 Step-by-Step Instructions
Boil & Smoothly Mash Potatoes
Boil peeled potato cubes in salted water for 12–15 minutes until very soft and tender. Drain thoroughly, let steam dry for 2 minutes, and mash until completely smooth without any lumps.
Season & Form Soft Potato Dough
Add cornstarch, finely chopped parsley, paprika, onion powder, turmeric, salt, black pepper, and 2 tsp of neutral oil to the mashed potatoes. Mix with a spatula until a soft, pliable, smooth dough forms.
Shape into Bite-Sized Tots
Roll and shape the potato dough into small, uniform bite-sized balls or mini tater tot cylinders. (Tip: If the dough feels sticky, lightly dust your fingers with a touch of extra cornstarch).
Heat Frying Oil to 350°F / 175°C
Heat 2 inches of oil in a deep skillet or pot to 350°F (175°C).
Fry to Golden Crunchiness
Carefully drop the potato bites into hot oil in small batches. Fry for 3–4 minutes, gently turning, until deeply golden brown and crunchy all over.
Drain, Toss & Garnish
Transfer with a slotted spider spoon onto a wire cooling rack or paper towels to drain excess oil. While hot, immediately toss with grated Parmesan cheese and extra fresh chopped parsley.
Serve Piping Hot
Serve immediately while warm and crispy with garlic aioli, ranch, or your favorite dipping sauce!
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
