🥗 Ingredients (tap to check off)
- 2 whole fish Whole gilthead sea bream (scaled, gutted, and patted completely dry)
- 4 tbsp Extra virgin olive oil
- 1 pc Fresh lemon (half sliced into rounds, half cut into wedges for grilling)
- 2 sprigs Fresh rosemary sprigs
- 2 sprigs Fresh thyme sprigs
- 2 tsp Flaky sea salt (such as Maldon)
- 1 tsp Freshly ground black pepper
- 2 pcs Red and yellow bell peppers (sliced into wide ribbons)
- 9 oz Cherry tomatoes on the vine
- 1 large Red onion (cut into thick wedges)
- 1 medium Zucchini (sliced into thick rounds or ribbons)
- 2 tbsp Extra virgin olive oil (for vegetables)
- 1 handful Fresh flat-leaf parsley (chopped) & extra olive oil for finishing
👨🍳 Step-by-Step Instructions
Score & Season the Fish
Rinse the gutted and scaled sea bream under cold water and pat thoroughly dry with paper towels inside and out (dry skin prevents sticking). Cut 3 to 4 diagonal slits (about 1/2-inch deep) across each side of both fish. Rub generously with olive oil, flaky sea salt, and black pepper. Stuff each fish cavity with lemon slices, rosemary sprigs, and fresh thyme.
Toss the Mediterranean Vegetables
In a large mixing bowl, toss the bell pepper strips, whole cherry tomato clusters, red onion wedges, and sliced zucchini with 2 tablespoons of olive oil, sea salt, and freshly cracked black pepper.
Preheat & Oil the Grill
Heat your grill to medium-high heat (200°C–220°C / 400°F–430°F). Thoroughly brush the grill grates clean and rub generously with an oil-soaked paper towel using tongs.
Fire-Grill to Crispy Perfection
Lay the seasoned fish gently on the hot grates. Grill undisturbed for 8 to 10 minutes on the first side until the skin is blistered, deeply golden, and releases easily with crisp char marks. Carefully flip with a wide fish spatula and grill the second side for another 8 to 10 minutes until the flesh is pearly and flakes effortlessly.
Char the Vegetables & Lemon
Arrange the vegetables and lemon wedges around the fish on the grill. Cook peppers and onions for 6 to 8 minutes, and cherry tomatoes and zucchini for 4 to 5 minutes, turning occasionally until blistered, sweet, and lightly charred.
Platter & Serve Mediterranean Style
Transfer the whole grilled fish onto a large rustic wooden board or ceramic platter. Surround with the charred colorful vegetables and grilled lemon wedges. Finish with a generous pour of fruity extra-virgin olive oil, a sprinkle of flaky sea salt, and fresh chopped parsley. Serve immediately!
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
