🥗 Ingredients (tap to check off)
- 1 large large eggplant, cut into 1-inch bite-sized cubes
- 2 medium medium zucchinis, cut into thick half-moons/cubes
- 2 medium bell peppers (1 red and 1 yellow), diced into 1-inch squares
- 4 medium ripe plum/Roma tomatoes (or 1 can whole peeled tomatoes), diced with juices
- 1 large large yellow onion, chopped
- 4 cloves fresh garlic cloves, finely minced
- 0.33 cup extra virgin olive oil (divided for browning each vegetable)
- 4 sprigs fresh thyme sprigs
- 1 sprig fresh rosemary sprig
- 1 leaf dried bay leaf
- 1 tsp dried Herbes de Provence (or oregano)
- 1 to taste sea salt and freshly ground black pepper
- 1 for serving fresh basil leaves & crusty French sourdough bread (for serving)
👨🍳 Step-by-Step Instructions
Sauté the Eggplant First
Heat 2 tablespoons of extra virgin olive oil in a wide heavy Dutch oven or braiser over medium-high heat. Add the cubed eggplant, season lightly with salt, and sauté for 6–8 minutes until golden and tender. Transfer to a bowl.
Sauté the Zucchini & Peppers Separately
In the same pan, add another splash of olive oil and sauté the zucchini for 5 minutes until lightly browned around the edges. Transfer to the bowl. Repeat with the diced red and yellow bell peppers, sautéing for 4–5 minutes until blistered and fragrant.
Build the Rich Tomato & Garlic Base
Lower heat to medium. Add a fresh drizzle of olive oil and cook the chopped onion for 5 minutes until soft and translucent. Stir in minced garlic and cook for 1 minute until aromatic. Add the chopped tomatoes with their juices, Herbes de Provence, thyme sprigs, rosemary, bay leaf, salt, and black pepper. Simmer for 8–10 minutes until a rich sauce forms.
Combine & Slow Braise
Gently fold the sautéed eggplant, zucchini, and peppers back into the tomato sauce, stirring delicately to keep the vegetable chunks intact.
Simmer to Tenderness
Cover and simmer on low heat for 35–45 minutes (or bake uncovered in a 340°F / 170°C oven), stirring minimally, until all vegetables are melt-in-your-mouth tender while retaining their beautiful shapes.
Garnish & Serve
Discard the woody herb stems and bay leaf. Drizzle generously with a final sheen of extra virgin olive oil and scatter fresh torn basil on top. Serve warm or at room temperature with thick slices of rustic crusty French bread!
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
