π₯ Ingredients (tap to check off)
For the High-Protein Coconut Filling
- 2 cups (approx. 480 g) thick whole or low-fat Greek yogurt (or Icelandic skyr)
- 1ΒΌ cups (125 g) unsweetened fine shredded coconut
- 1β2 tbsp pure honey or pure maple syrup (optional, to taste)
- 1 tsp pure vanilla extract
- Pinch of fine sea salt
For the Crisp Dark Chocolate Shell
- 7 oz (200 g) dark chocolate (70% or semi-sweet), roughly chopped
- 1 tsp virgin coconut oil (helps achieve a smooth, glossy crackly shell)
- Flaky sea salt or toasted coconut flakes (optional, for topping)
π¨βπ³ Step-by-Step Instructions
Mix the Coconut Filling
In a medium mixing bowl, combine the thick Greek yogurt, unsweetened shredded coconut, vanilla extract, optional honey or maple syrup, and a small pinch of sea salt. Stir well with a silicone spatula until a dense, moldable, dough-like mixture forms.
Shape into Rectangular Bars
Line a small baking sheet or plate with parchment paper. Using your hands or a small cookie scoop, portion out the mixture into 8 to 10 even portions. Mold each into a compact rectangular candy bar shape (about 3 inches long by 1 inch wide) and arrange them on the parchment paper with space between each.
Freeze Until Solid
Place the baking sheet into the freezer for 1 to 2 hours until the bars are completely firm and frozen solid to the touch. This makes dipping clean and prevents the yogurt base from softening.
Melt the Dark Chocolate
In a microwave-safe bowl or over a double boiler, melt the chopped dark chocolate together with 1 teaspoon of coconut oil, stirring in 20-second increments until completely smooth, glossy, and pourable.
Dip & Coat the Bars
Working with one frozen bar at a time, lower it into the melted dark chocolate using a fork, turning quickly to coat all sides evenly. Lift the bar with the fork, gently tap against the rim of the bowl to let excess chocolate drip off, and return to the parchment-lined tray. Because the bar is frozen, the chocolate shell will snap-set within 30 seconds.
Chill & Store
Sprinkle lightly with flaky sea salt or toasted coconut flakes before the shell fully hardens if desired. Transfer to the refrigerator for 10 minutes to finish setting. Enjoy cold straight away, or store in an airtight container in the freezer for up to 1 month.
π° Storing & Chilling Desserts
Refrigeration: Keep covered in an airtight container or under a cake dome in the refrigerator for up to 4 to 5 days.
Serving Tip: For the richest flavor and silkiest mouthfeel, allow refrigerated bakes to rest at room temperature for 15 minutes before serving.
π³ Recommended Kitchen Equipment
Kitchen Note: Having the right kitchen tools ensures foolproof results. We recommend items tested in our own home kitchen.
