π₯ Ingredients (tap to check off)
For the Jewel-Red Pomegranate Base
- 3 large pomegranates, seeded (about 2 cups fresh juice), or 2 cups 100% pure pomegranate juice
- 1 cup granulated sugar
- 1/2 cup cornstarch
- 1/4 cup shelled unsalted pistachios, roughly chopped
For the Snowy Coconut Coating
- 1/2 to 3/4 cup unsweetened fine desiccated coconut
π¨βπ³ Step-by-Step Instructions
Make the Fresh Juice
Blend the pomegranate seeds until pulpy, then strain through a fine-mesh sieve into a bowl, pressing well with a spoon to extract all the liquid until you have 2 cups of pure juice.
Whisk Sugar & Cornstarch Smooth
Pour the pomegranate juice into a medium saucepan. Add the sugar and cornstarch and whisk off the heat until completely smooth, with no dry starch lumps remaining.
Cook to a Thick, Glossy Gel
Cook over medium heat, stirring constantly, until it comes to a boil. Lower the heat and keep cooking and stirring nonstop for about 8 to 10 minutes, until it turns into a very thick, glossy, deep-red paste that pulls away from the sides of the pan and holds its shape on the spoon.
Fold in the Pistachios
Remove from the heat and stir in the chopped pistachios until evenly distributed throughout the thick ruby mixture.
Set in Glass Dish & Chill
Lightly wet the inside of an 8-inch square glass dish with cold water and shake out the excess. Pour in the hot mixture and smooth the top flat with a spatula. Let it cool to room temperature, then cover and refrigerate for at least 5 hours (preferably overnight) until fully firm and set.
Coat in Coconut & Cut into Cubes
Sprinkle desiccated coconut generously over the set slab. Invert it onto a coconut-dusted board and sprinkle more coconut over the top. Cut into clean strips, then into small bite-sized cubes, wiping or wetting the knife between cuts. Roll each cube lightly in coconut to coat all sides.
π° Storing & Chilling Desserts
Refrigeration: Keep covered in an airtight container or under a cake dome in the refrigerator for up to 4 to 5 days.
Serving Tip: For the richest flavor and silkiest mouthfeel, allow refrigerated bakes to rest at room temperature for 15 minutes before serving.
π³ Recommended Kitchen Equipment
Kitchen Note: Having the right kitchen tools ensures foolproof results. We recommend items tested in our own home kitchen.
