🥗 Ingredients (tap to check off)
- 1 lb Fresh small tender okra pods (washed and stems lightly trimmed without puncturing caps)
- 4 cloves Fresh garlic cloves (peeled and lightly crushed)
- 3 sprigs Fresh dill sprigs
- 1 tsp Whole coriander seeds
- 1 tsp Whole black peppercorns
- 1/2 tsp Yellow mustard seeds
- 2 tbsp Pure non-iodized rock salt or pickling salt (for 3% mineral brine)
- 4.2 cups Filtered non-chlorinated water (boiled and cooled to lukewarm)
- 5 pcs Dried chickpeas or a fresh grape leaf (to keep okra submerged)
- 2 tbsp Live whey from yogurt or kefir (optional, probiotic booster)
- 1 bowl Lemon water (water + juice of 1/2 lemon for pre-soak)
👨🍳 Step-by-Step Instructions
Lemon Bath Pre-Soak
Wash the fresh okra thoroughly. Place in a bowl of cold water mixed with fresh lemon juice and let soak for 20 to 30 minutes. This preserves the bright green hue and prevents sliminess. Drain and pat dry, trimming the stem tips without slicing into the seed pod.
Sterilize the Glass Jar
Immerse your glass jar and lid in boiling water for 5 to 10 minutes to sanitize. Remove with clean tongs and let air dry completely without touching the inside.
Dissolve the 3% Brine
In a saucepan, bring 1 liter (4.2 cups) of non-chlorinated water and 30g (2 tbsp) of non-iodized rock salt to a boil until fully dissolved. Remove from heat and allow to cool until lukewarm (under 35°C / 95°F so heat doesn't kill beneficial microbes).
Pack Jar with Aromatics & Okra
Layer garlic cloves, dill sprigs, coriander seeds, mustard seeds, and peppercorns in the jar. Pack the whole okra pods tightly and vertically into the jar, alternating stem-up and tip-up for a snug fit.
Submerge in Brine & Seal
Pour the lukewarm 3% brine over the okra until completely covered. Add 1-2 tbsp live whey if using. Place 4–5 dried chickpeas or a grape leaf right on top to act as a fermentation weight, ensuring no okra floats above the liquid line. Seal the lid tightly.
Ferment for 10–15 Days
Store the jar upright in a cool, dark pantry or cabinet away from direct sunlight (ideally 18°C–22°C / 65°F–72°F) for 10 to 15 days. Tiny probiotic bubbles will form as it ferments into a crisp, sour, gut-healing delicacy. Once pleasantly tangy, transfer to the refrigerator where it keeps for months!
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
