👨🍳 Step-by-Step Instructions
Preheat & Season the Roast
Preheat your oven to 350°F (175°C). Place the beef chuck roast into an oven-safe roasting dish or Dutch oven with a tight-fitting lid. Season generously on all sides with salt, black pepper, smoked paprika, garlic powder, mild chili flakes, dried thyme, ground cumin, and cinnamon.
Braise Low & Slow
Scatter the whole garlic cloves around the meat. Pour the beef bone broth into the dish around the beef. Cover tightly with the lid (or a double layer of heavy-duty foil) and braise in the oven for 3 hours until the beef is meltingly tender.
Chop the Vegetables
While the beef is braising, dice the eggplant, chop the red onion and red bell pepper, and rinse and drain the canned chickpeas.
Shred Beef & Add Vegetables
Remove the pot from the oven. Using two forks, shred the chuck roast directly in the flavorful braising liquid. Add the diced eggplant, red onion, red bell pepper, and rinsed chickpeas. Toss everything together to coat in the braising juices. Cover and return to the oven at 400°F (200°C) for 40 minutes.
Uncover to Caramelize
Remove the lid and roast uncovered for an additional 10–15 minutes until the vegetables are tender, slightly caramelized at the edges, and the pan juices thicken.
Whisk the Garlicky Tahini Sauce
In a small bowl, whisk together the Greek yogurt, tahini, fresh lemon juice, grated garlic, and salt. Add cold water 1 tablespoon at a time until silky and pourable.
Garnish & Serve Warm
Drizzle the warm shredded beef and roasted vegetables generously with the garlicky tahini yogurt sauce. Scatter fresh chopped parsley and a pinch of chili flakes over top. Serve hot with fresh lemon wedges, warm pita bread, or fluffy grain bowls.
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
