π₯ Ingredients (tap to check off)
- 5 small lemons small organic lemons (washed and dried thoroughly)
- 3 tbsp coarse sea salt (or kosher salt, for packing inside & jar)
- 0.75 cup (approx. 3-4 juiced lemons) fresh lemon juice (freshly squeezed, to completely submerge lemons)
- 1 sprig fresh rosemary sprig
- 1 tsp whole black peppercorns
- 0.5 tsp whole coriander seeds
π¨βπ³ Step-by-Step Instructions
Prep the Lemons
Wash and thoroughly dry the organic lemons. Cut a deep cross into the top of each lemon, slicing lengthwise down toward the base without cutting all the way through, so the four quarters remain attached at the stem bottom.
Salt the Inside Cavities
Gently pry open the quarters of each lemon and pack about 1 teaspoon of coarse sea salt generously into the center of each one.
Pack the Jar & Express Juices
Sprinkle a base layer of coarse sea salt along with a pinch of peppercorns and coriander seeds at the bottom of a sterilized glass jar. Pack the salted lemons tightly into the jar, pressing down firmly with a spoon or your knuckles so they begin releasing their fresh juices.
Tuck in Fresh Aromatics
Slide the fresh rosemary sprig down the side of the glass alongside the remaining black peppercorns and coriander seeds.
Top with Lemon Juice & Seal
Pour freshly squeezed lemon juice over the top until the lemons are completely submerged under liquid, leaving a 1/2-inch headspace at the top. Seal the jar tightly.
Cure to Tenderness
Store in a cool, dark place for at least 3 to 4 weeks. Gently invert or shake the jar every couple of days to distribute the salt and natural brine until the lemon rinds soften into tender, aromatic translucent gems.
βοΈ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350Β°F (175Β°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
