- 1 pinch fine sea salt
For the Creamy Cashew Caramel Layer
- 1 cup raw cashews (soaked in warm water for 15 minutes, then drained)
- 4 tbsp melted virgin coconut oil
- 3 tbsp pure maple syrup
- 1 tsp pure vanilla extract
- 1 to 2 tbsp warm water (only if needed to facilitate smooth blending)
For the Snappy Dark Chocolate Coating
- 8 oz (approx. 225 g / 1⅓ cups) dark chocolate (60% to 70%), finely chopped or chips
- 1 tsp coconut oil (for glossy shine and smooth dipping)
- Optional: Coarse flaky sea salt for finishing
👨🍳 Step-by-Step Instructions
Make the Walnut-Date Base
Add the raw walnuts to a food processor and pulse until finely chopped. Add the pitted dates and a pinch of salt; blend continuously until the mixture clumps together and holds firmly when squeezed between your fingers.
Press Firmly into Pan
Line an 8 x 5-inch loaf pan with parchment paper, leaving overhang on the sides. Tip the walnut-date mixture into the pan and press it down firmly and evenly from edge to edge with the back of a spoon or offset spatula. Packing it very tight is the secret to bars that slice cleanly without crumbling.
Blend the Silky Cashew Caramel
Wipe out the food processor bowl. Add the soaked cashews, melted coconut oil, pure maple syrup, and vanilla extract. Blend on high for 2 to 3 minutes, scraping down the sides as needed, until thick, glossy, and completely smooth like caramel cream. Add 1 to 2 tablespoons of warm water only if needed to help blend.
Layer & Freeze Solid
Spread the cashew cream evenly over the pressed walnut base, smoothing the top flat. Place the pan in the freezer for about 1 hour, until the slab is completely firm and frozen through.
Slice into Clean Rectangular Bars
Use the parchment paper handles to lift the frozen slab onto a cutting board. Using a large, sharp chef knife, cut into 8 to 10 even rectangular bars. Keep the bars in the freezer while preparing the chocolate.
Melt the Chocolate Coating
In a heatproof bowl set over a small saucepan of gently simmering water (or in the microwave in 30-second bursts), melt the dark chocolate and 1 teaspoon of coconut oil, stirring until glossy and completely smooth.
Dip the Frozen Bars
Line a tray with parchment paper. Work with 2 to 3 bars at a time from the freezer. Rest a frozen bar on a fork, lower it into the melted chocolate to coat all sides, then lift and tap the fork gently against the bowl rim to let excess chocolate drip away. Transfer to the parchment-lined tray.
Drizzle, Chill & Set
Drizzle the remaining melted chocolate over each bar in a zigzag pattern. Transfer the tray to the refrigerator for 20 to 30 minutes until the chocolate shell sets completely firm with a crisp, clean snap. Serve chilled!
🍰 Storing & Chilling Desserts
Refrigeration: Keep covered in an airtight container or under a cake dome in the refrigerator for up to 4 to 5 days.
Serving Tip: For the richest flavor and silkiest mouthfeel, allow refrigerated bakes to rest at room temperature for 15 minutes before serving.
