- β cup well-stirred tahini paste
- Β½ cup small dill pickles or crunchy gherkins, finely chopped
- 3 tbsp dill pickle brine from the jar (plus more to taste)
- 2 tbsp extra-virgin olive oil
- 1 small garlic clove, peeled and grated
- 2 tbsp fresh dill, roughly chopped
- 1 to 3 tbsp ice-cold water (only as needed to loosen and whip)
- Fine sea salt, to taste (taste first, as brine is salty)
For Garnish & Serving
- ΒΌ cup small dill pickles, sliced into round chips
- Fresh dill sprigs
- 1 to 2 tbsp extra-virgin olive oil, for swirling
- Crisp rectangular crackers, warm pita bread, pita chips, or crunchy fresh vegetables
π¨βπ³ Step-by-Step Instructions
Load the Blender or Food Processor
Add the drained chickpeas to a high-speed blender or food processor. Layer the chopped dill pickles, fresh chopped dill, grated garlic, and well-stirred tahini directly on top.
Add the Tangy Liquids
Pour in the 3 tablespoons of dill pickle brine from the jar along with 2 tablespoons of extra-virgin olive oil.
Blend Until Whipped & Aerated
Blend on high speed for 2 to 3 minutes, stopping once or twice to scrape down the bowl sides, until the hummus is completely smooth, pale, and glossy with a very delicate green tint. If it feels too stiff for your blender, stream in ice-cold water or extra pickle brine 1 tablespoon at a time until light and fluffy.
Taste & Balance Seasoning
Taste for salt and acidity. Add a tiny pinch of salt or an extra splash of pickle brine if you want an even brighter, tangier punch, then pulse for 15 more seconds to combine.
Swirl into a Serving Bowl
Spoon the whipped hummus into a wide, shallow ceramic bowl. Using the back of a large spoon, smooth it outward with sweeping circular motions, creating a decorative shallow well in the center.
Garnish with Pickles & Dill
Arrange the sliced pickle rounds in the center and along the swoops. Scatter tender fresh dill sprigs across the surface, then drizzle extra-virgin olive oil generously so it pools into the swirls.
Serve Right Away or Chilled
Serve immediately at room temperature, or chill in the refrigerator for 30 minutes for an even firmer, creamier dip. Enjoy with crackers, warm pita, pita chips, or raw vegetables.
βοΈ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350Β°F (175Β°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
