✨ Why This Recipe Works

Tender golden lamb sautéed with roasted almonds, chickpeas, sweet currants, and carrots layered over fragrant spiced cardamom basmati rice.

Crafted with everyday pantry staples and perfected in Mery's home kitchen, this Royal Palace Spiced Lamb & Almond Rice Pilaf brings authentic comfort and vibrant flavors straight to your table. Every step has been carefully timed and measured so home cooks of any skill level can recreate foolproof, delicious results with ease.

With a quick 20 minutes of prep and 50 minutes of cooking, this wholesome dish balances ease and rich flavor without requiring complicated culinary equipment.

💡 Mery's Secret for Success: Soaking the basmati rice in warm water for 20 minutes before layering ensures long, fluffy, unbroken grains. Letting the pot rest covered with a clean kitchen towel under the lid for 15 minutes off the heat allows the steam to distribute evenly.

🥗 Ingredients (tap to check off)

For the Sautéed Lamb, Vegetables & Aromatics

  • 500 g (1.1 lbs) lamb leg or shoulder, cut into bite-sized cubes
  • 1 large yellow onion, finely chopped
  • 2 medium carrots, julienned or sliced into ribbons
  • 4–5 garlic cloves, minced
  • ¾ cup whole raw almonds, blanched and peeled
  • 2 tbsp unsalted butter
  • ¼ cup extra-virgin olive oil
  • 1 cup cooked chickpeas, drained
  • 2 tbsp sweet dried currants (or raisins)
  • 1 tsp fine sea salt
  • 1 tsp freshly ground black pepper
  • 1 tsp ground cinnamon

For the Rice Pilaf & Whole Spices

  • 500 g (2½ cups) long-grain basmati rice, rinsed until water runs clear
  • 3½ cups hot lamb broth (or rich beef/vegetable broth)
  • 1 tsp whole cumin seeds
  • 4–5 whole green cardamom pods, lightly crushed

For Garnish & Serving

  • Fresh mint sprigs and pomegranate seeds
  • Cool garlic-cucumber yogurt sauce (for serving)

👨‍🍳 Step-by-Step Instructions

1

Sear the Lamb

Place the cubed lamb meat in a wide, heavy-bottomed pot or Dutch oven over medium-high heat. Sauté the lamb until it releases its juices and then continues cooking until the liquid evaporates and the meat browns gently.

2

Sauté Aromatics, Carrots & Almonds

Add the chopped onion, julienned carrots, minced garlic, blanched whole almonds, butter, and olive oil to the pot. Cook over medium heat, stirring occasionally, for 6–8 minutes until the carrots soften and the almonds turn lightly golden.

3

Add Chickpeas, Currants & Spices

Stir in the cooked chickpeas, dried currants, sea salt, black pepper, and ground cinnamon. Sauté for another 2–3 minutes so the spices bloom and release their fragrant aroma into the meat and vegetables.

4

Layer the Basmati Rice

Spread the rinsed basmati rice in an even, smooth layer directly over the meat and vegetable mixture. Gently pour the hot broth over the back of a large spoon so as not to disturb the layered rice.

5

Scatter Whole Spices & Simmer

Scatter the whole cumin seeds and lightly crushed cardamom pods across the top of the rice. Bring the liquid to a gentle boil, then cover tightly with the lid, reduce the heat to the lowest setting, and cook for 18–20 minutes until the rice has completely absorbed the broth.

6

Rest & Fluff

Remove the pot from the heat. Place a clean kitchen towel between the pot and the lid, and let it rest undisturbed for 10–15 minutes. Gently fluff the top layer of rice or invert the whole pot onto a large celebratory serving platter.

7

Garnish & Serve

Garnish the royal pilaf with fresh mint leaves and ruby pomegranate seeds. Serve warm with cool garlic yogurt on the side.

❄️ Storing & Reheating Leftovers

Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.

Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
