👨🍳 Step-by-Step Instructions
Pressure Cook the Base & Chicken
Place the chopped onion, potato, carrot, sweet red pepper, sliced garlic, rinsed red lentils, chicken drumstick, salt, and water into a stovetop pressure cooker or electric pressure cooker. Seal securely and cook under high pressure for 6 minutes. Allow the pressure to release naturally for 10 minutes, then carefully vent any remaining steam and open the lid. Lift out the cooked chicken drumstick with tongs and transfer to a plate to cool slightly.
Puree the Vegetable Broth
Immerse a stick blender directly into the pot and blend the cooked vegetables and lentils until completely smooth, silky, and velvety.
Cook the Vermicelli Noodles
Return the pot to medium heat and bring the soup to a gentle simmer. Stir in the fine vermicelli noodles and cook for 6–8 minutes, stirring occasionally, until tender and cooked through.
Shred Chicken & Add Parsley
While the vermicelli simmers, use two forks to shred the chicken meat off the bone into bite-sized tender pieces, discarding the bone and skin. Stir the shredded chicken and fresh chopped parsley into the simmering soup. Taste and adjust seasoning with additional sea salt if desired.
Sizzle the Spiced Butter & Serve
In a small pan over medium heat, melt the 2 tablespoons of butter until foaming. Swirl in the Aleppo pepper flakes and cook for about 30 seconds until aromatic and deep brick-red. Ladle steaming soup into warm bowls, drizzle the fragrant spiced butter across each portion, and top with fresh mint leaves. Serve piping hot alongside warm crusty bread.
🥣 Storing, Freezing & Reheating Soup
Refrigerator: Allow the soup to cool completely, then ladle into airtight glass containers. Refrigerate for up to 3 to 4 days. Soups often taste even richer the next day as the herbs and broth deepen.
Freezing & Reheating: Freeze in portioned containers for up to 3 months. Reheat gently over medium-low heat on the stovetop, adding a small splash of broth or water if the noodles or legumes have absorbed liquid.
