🥗 Ingredients (tap to check off)
For the Baba Ganoush Dip
- 2 medium-large eggplants (about 1.5 lbs / 700 g total)
- 2 tbsp high-quality creamy tahini
- 2 garlic cloves, finely minced or grated
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra-virgin olive oil
- ½ tsp fine sea salt (or to taste)
- ¼ tsp ground cumin (optional)
For Garnish & Serving
- 1–2 tbsp extra-virgin olive oil (for drizzling)
- ½ tsp sweet paprika
- 2 tbsp fresh pomegranate seeds (arils)
- Fresh mint leaves, finely chopped
- Warm grilled pita bread, pita chips, and crisp cucumber slices
👨🍳 Step-by-Step Instructions
Roast the Eggplants
Pierce the eggplants several times with a fork. Roast them directly over an open gas flame, turning frequently with tongs, for 15–20 minutes until the skin is completely charred and black and the flesh collapses and becomes tender. Alternatively, roast in a 425°F (220°C) oven on a baking sheet for 35–45 minutes.
Cool, Peel & Drain
Transfer the charred eggplants to a bowl and let cool until easy to handle. Peel off and discard the charred skins. Place the soft flesh in a colander or fine-mesh strainer and let excess liquid drain for 5 minutes to keep the dip thick.
Mash & Blend
Transfer the drained eggplant flesh into a mixing bowl. Add the creamy tahini, minced garlic, fresh lemon juice, extra-virgin olive oil, salt, and optional ground cumin. Mash thoroughly with a fork until creamy and well incorporated while keeping a delicate rustic texture.
Swirl & Plate
Spoon the Baba Ganoush into a wide shallow serving bowl. Use the back of a spoon to create elegant circular swirls with a small well in the center.
Garnish & Serve
Pour golden extra-virgin olive oil into the center well and swirls. Dust with sweet paprika, scatter fresh ruby pomegranate seeds and chopped fresh mint on top. Serve with warm pita bread and fresh vegetable sticks.
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
