π¨βπ³ Step-by-Step Instructions
Brown the Ground Beef
Heat 1 tablespoon of oil in a large soup pot or Dutch oven over medium-high heat. Add the ground beef, diced onion, and minced garlic. Cook, breaking apart with a wooden spoon, until the beef is browned and no longer pink. Transfer the cooked beef and onions to a plate and set aside.
Toast the Fideo Noodles
In the same pot, add another tablespoon of oil over medium-high heat. Add the dry fideo noodles and stir continuously for 2β3 minutes until they turn a rich, even golden-brown. Watch carefully as they toast very quickly.
Blend the Tomato Puree
In a blender, combine the Roma tomatoes, garlic clove, onion wedge, ground cumin, bouillon paste, tomato bouillon cube, and 1 cup of water. Blend on high speed until completely smooth.
Combine & Simmer
Pour the blended tomato puree directly over the hot toasted noodles in the pot. Add the browned ground beef, 4 cups of water, diced carrots, and diced potatoes. Season with salt and pepper to taste. Bring to a gentle boil, cover with a lid, and simmer over medium heat for 8 minutes.
Add Zucchini & Cilantro
Uncover and stir in the diced zucchini and fresh cilantro. Cover again and simmer for an additional 4 minutes until the potatoes, carrots, and fideo noodles are completely tender and the zucchini is bright green.
Ladle & Garnish
Ladle the hot, comforting soup into deep bowls. Garnish with fresh lime wedges, sliced avocado, crumbled cheese, and extra cilantro. Serve warm.
π₯£ Storing, Freezing & Reheating Soup
Refrigerator: Allow the soup to cool completely, then ladle into airtight glass containers. Refrigerate for up to 3 to 4 days. Soups often taste even richer the next day as the herbs and broth deepen.
Freezing & Reheating: Freeze in portioned containers for up to 3 months. Reheat gently over medium-low heat on the stovetop, adding a small splash of broth or water if the noodles or legumes have absorbed liquid.
π³ Recommended Kitchen Equipment
Kitchen Note: Having the right kitchen tools ensures foolproof results. We recommend items tested in our own home kitchen.
