👨🍳 Step-by-Step Instructions
Knead the Meatballs
In a mixing bowl, combine the ground meat, grated onion (pressed in a strainer to remove excess liquid), crushed garlic, egg white, fine bulgur, red pepper flakes, cumin, salt, and black pepper. Knead vigorously with your hands for 4 to 5 minutes until the mixture becomes sticky and cohesive so the meatballs hold their shape.
Shape & Dredge in Flour
Roll small portions of the meat mixture in the palms of your hands into marble-sized balls (about 1 inch / 2.5 cm wide). Place 2 tablespoons of flour on a wide tray or plate and gently roll the meatballs until lightly and evenly coated on all sides.
Sauté the Vegetables
Heat olive oil in a large soup pot or Dutch oven over medium heat. Add the diced carrots and sauté for 3 minutes until slightly softened. Add the diced potatoes and sauté for another 2 minutes. Pour in 4 to 5 cups of boiling water or broth and bring to a rolling boil.
Simmer the Meatballs
Carefully drop the floured meatballs one by one into the boiling broth. Lower the heat to medium, cover with a lid, and simmer gently for 15 to 20 minutes until the meatballs, carrots, and potatoes are tender.
Whisk & Temper the Lemon-Yogurt Dressing
In a medium bowl, whisk together the plain yogurt, egg yolk, and freshly squeezed lemon juice until completely smooth. While whisking continuously, slowly ladle 2 scoops of the hot simmering broth into the yogurt mixture to temper it gently, ensuring the yogurt will not separate or curdle.
Combine, Garnish & Serve
Pour the warm tempered yogurt dressing slowly into the pot while gently stirring. Allow the soup to return to a gentle simmer for 2 minutes. Remove from heat, stir in freshly chopped parsley, and ladle into warm bowls. Drizzle with a touch of warm paprika olive oil and serve with crusty bread!
🥣 Storing, Freezing & Reheating Soup
Refrigerator: Allow the soup to cool completely, then ladle into airtight glass containers. Refrigerate for up to 3 to 4 days. Soups often taste even richer the next day as the herbs and broth deepen.
Freezing & Reheating: Freeze in portioned containers for up to 3 months. Reheat gently over medium-low heat on the stovetop, adding a small splash of broth or water if the noodles or legumes have absorbed liquid.
