🥗 Ingredients (tap to check off)
- 2 whole medium potatoes, boiled, cooled and grated
- 1 whole large red beet, boiled, cooled and grated
- 4 whole medium carrots, peeled and grated
- 3 tbsp extra virgin olive oil (for sautéing carrots)
- 6 tbsp thick strained Greek yogurt (or Süzme yogurt)
- 2 cloves fresh garlic cloves, finely minced
- 1 tsp fine sea salt
- 0.25 bunch fresh dill, finely chopped
- 4 halves crisp raw walnut halves (for topping)
- 1 cup fresh baby arugula leaves (for plating & serving)
👨🍳 Step-by-Step Instructions
Prep & Grate the Root Vegetables
Grate the boiled potatoes and boiled beet into two separate mixing bowls. Peel and coarsely grate the raw carrots into a third bowl.
Sauté the Grated Carrots
Heat 3 tbsp olive oil in a skillet over medium heat. Add the grated carrots and sauté for 5–7 minutes until tender and sweet. Remove from heat and allow to cool completely to room temperature.
Whisk the Creamy Garlic Yogurt
In a small bowl, whisk together the thick Greek yogurt, minced garlic, and salt until smooth and creamy. Divide this garlic yogurt mixture equally among the three vegetable bowls (potatoes, carrots, and beets).
Mix & Season the Three Distinct Layers
Stir each bowl thoroughly until the yogurt is evenly incorporated. Fold the finely chopped fresh dill into the potato bowl for aroma and green speckles.
Pack & Mold into Towers
Place 4 round stainless steel food ring molds onto your serving platter. Press the seasoned potato-dill mixture firmly into the bottom of each ring. Layer the vibrant sautéed carrot mixture in the middle, and top with the gorgeous ruby-red beet mixture.
Smooth, Set & Unmold
Press down firmly with the back of a spoon to smooth and tightly pack each layer. Carefully lift the metal rings upward to reveal sharp, clean, colorful tiers.
Garnish & Serve
Crown each salad tower with a crisp walnut half and fresh dill sprig. Scatter peppery baby arugula leaves around the base and serve chilled or at room temperature!
❄️ Storing & Reheating Leftovers
Refrigeration: Allow the dish to cool to room temperature, then store in an airtight glass container in the refrigerator for up to 3 to 4 days.
Reheating: Reheat in a skillet over medium-low heat with a small splash of water or olive oil, or in a 350°F (175°C) oven until thoroughly warmed. This preserves the delicate moisture without drying out the texture.
