🥗 Ingredients (tap to check off)
- 750 g Watermelon rinds (green skin and red flesh removed, cut into 1/2-inch cubes)
- 3 cups Granulated sugar
- 3 cups Water
- 1 tsp Whole cloves
- 1 pc Cinnamon stick
- 2 tbsp Fresh lemon juice
- 1 slice Fresh lemon slice
- 1 tsp Unsalted butter (optional, to reduce surface foaming)
👨🍳 Step-by-Step Instructions
Prep the Watermelon Rinds
Using a sharp knife or vegetable peeler, peel away the tough outer dark green skin of the watermelon rinds. Trim away any remaining pink or red flesh so only the firm white rind remains. Cut into neat, bite-sized 1/2-inch (1.5 cm) cubes.
Combine in the Jam Pot
In a heavy-bottomed pot, combine the cubed watermelon rinds, granulated sugar, water, fresh lemon juice, lemon slice, whole cloves, and the cinnamon stick. Add a tiny dot of butter (optional) to minimize foaming. Stir gently until the sugar begins to dissolve.
Simmer to Amber Translucency
Place the pot over medium heat and bring to a rolling boil, stirring occasionally. Once boiling, reduce the heat to medium-low and simmer gently for 45 to 50 minutes. The watermelon rind cubes will gradually absorb the spiced syrup and turn gloriously translucent and glassy.
Test the Spoon Consistency
Scoop a piece of rind and a spoonful of syrup onto a chilled plate or spoon. The rind should look glowing and translucent within seconds, and the syrup should have a rich, honeyed viscosity.
Jar, Vacuum Seal & Store
For long-term storage, ladle the piping-hot jam into sterilized glass jars, leaving 1/2-inch headspace. Wipe rims, seal tightly with new lids, and invert for 5 minutes to create a vacuum seal. Let cool completely and store in a cool, dark pantry or refrigerate. Serve with cheese, buttered toast, or alongside a hot cup of tea!
🍯 Storing Preserves & Jams
Unopened Jars: Store tightly sealed jars in a cool, dark pantry or cupboard away from direct sunlight for up to 6 months. The natural fruit pectin, sugar, and gentle acidity naturally preserve the fruit.
Once Opened: Keep refrigerated in the glass jar with the lid firmly secured and enjoy within 3 to 4 weeks for optimal aroma and flavor.
